� 200g Butter
� 200g Caster Sugar
� 4 Medium Eggs
� 200g Self raising Flour, sifted
� 1tsp Vanilla Bean Extract
� 4tbsp Double Cream
� 300g Strawberries, hulled & halved
� 1-2tbsp Granulated Sugar
decoration
� four-5 Meringue Nests
� 250ml Double Cream
� 75g Icing sugar, sifted
� 200g Strawberries, sliced
1) Preheat the oven to 190C/170C Fan � grease & line a 10x10inch square Tray with parchment paper.
2) With a stand mixer beat the butter & sugar together until clean � add the eggs, flour, vanilla and double cream and beat once more � attempt now not to overcome it too fast on a excessive speed, try a medium speed and don�t blend longer than essential!
three) Pour the mixture into the tin and spread calmly � location the strawberries flippantly over the top of the cake with the reduce side down and sprinkle the top of the cake with the sugar. Bake within the oven for 25-half-hour till cooked through! (check with a skewer)
four) depart the cake to cool inside the tin for 10 mins after which transfer to a cord rack (I maintain it in the parchment paper however so that the moisture of the strawberries remains within the cake!)
5) as soon as cooled switch to your serving plate � whip the double cream up with the icing sugar so it holds itself and spread over the cake � crush the meringues and cover the cake in them, and enhance with the sliced strawberries.
