3-4 pound chuck roast, I advocate certified Angus pork logo
Salt and pepper

Medium onion, chopped
2-4 carrots, chopped*
2 carrots, peeled and cut into chunks*
1 stalk celery, chopped
eight oz button mushrooms, wiped clean and halved or quartered
2 cloves garlic, minced
2 teaspoons sugar
1 cup bird broth
half of cup dry red wine
1 sprig thyme
1 can (14 half ounces) diced tomatoes with juice
1 1/2 cups water
1 sprig rosemary
instructions
Preheat oven to three hundred�.
Pat chuck roast dry with paper towels. Sprinkle each aspects with salt and pepper. Serve over mashed potatoes or your favored starch.
